Friday Food Day

Here are some of the meals I enjoyed this week.


Roasted veggies (broccoli, peppers, and chickpeas) with some Romaine lettuce, drizzled with Annie's Natural's roasted red pepper dressing. This was enjoyed at L's family reunion, and was actually prepared by L, too. (I'm thankful he did because the other offerings there were all meat and cheese as far as the eye could see.)


garlicky fried tofu for breakfast (Man, I love tofu.)


spaghetti made with brown rice pasta (gluten-free). I used a jarred roasted garlic sauce, but added spinach.


A hefty sprinkle of this vegan Parmesan "cheese" is always a delicious addition.


A big pot of roasted red pepper and corn soup.


Seen here with a dollop of non-Daisy (Tofutti Sour Supreme, that is).

I picked up a box of these crackers on a whim the last time I was at the store. The flavor sounded pretty good.


I was impressed to find actual sunflower seeds in almost every single cracker.


I ate them dredged through my beloved Sabra roasted red pepper hummus. As far as I'm concerned, there's no such thing as too much hummus.


One of my go-to meals, a coconut curry. Made with bell peppers, broccoli, cauliflower, fried tofu, and local yellow squash and green zucchini I picked up from the farmers market.


Another meal made from local squash: spaghetti squash casserole, based on this recipe. * I added more spices and skipped the cornmeal crust.





Another golden opportunity to add Tofutti Sour Supreme.

For the time being, I'm going to aim for sharing the majority of food pics on Fridays. However, this will change in November, which is Vegan MoFo time! That's right, I'll be participating, which means at least 5 days a week, I'll be updating about the joys of vegan livin' and vegan eating. (And it really is a joyous thing.) Stay tuned and brace yourselves for regular doses of vegan food porn, folks!

  1. Ok, so everything looks pretty much AWESOME. Especially that fried tofu. How are there people out there that DON'T like tofu?
    And I LOVE Sabra hummus...but almost never let myself buy it :'(

  2. I love those crackers! They're some of my favorites. The flax flatbreads are really good too; they are absolutely COVERED in flax seeds. I love the Back to Nature line :)

  3. Oh, the black beans and spaghetti squash looks really interesting. I am new to spaghetti squash but I found it really bland - and therefore perfect for southwestern flavors!
